Rich cherry syrup replaces the sugar, creating a deep ruby hue. The smoke cuts through the fruitiness to ensure it remains a serious whiskey drink.

Ingredients

  • 2 oz Bourbon

  • 0.25 oz Cherry Syrup (use the rich syrup from a jar of Luxardo or Amarena cherries)

  • 2 dashes Angostura Aromatic Bitters

  • Smoke: Cherry Wood or Apple Wood chips

  • Garnish: 1 Luxardo Maraschino Cherry

Directions

  • Smoke: Lightly smoke the empty rocks glass using a chimney smoker and fruit-wood chips. Cap for 30 seconds.
  • Combine: In a mixing glass, combine bourbon, the dark cherry syrup, and bitters.
  • Stir: Add ice and stir until well-chilled.
  • Strain: Place a large cube into the smoked glass and strain the mixture over it.
  • Garnish: Skewer a premium cherry and lay it across the rim or drop it in.

Notes

  • Never use the neon bright red “sundae” cherries. Their flavor is artificial and chemical. Only use premium dark cherries packed in heavy syrup.
