Honey adds a luxurious, viscous mouthfeel that sugar cannot mimic. Paired with a lemon twist, this drinks lighter and brighter than its counterparts.

Ingredients

  • 2 oz Bourbon

  • 0.25 oz Honey Syrup (Recipe: Mix 3 parts honey with 1 part warm water)

  • 2 dashes Aromatic Bitters

  • Garnish: Lemon Peel (wide strip)

Directions

  • Prep Syrup: Ensure your honey syrup is room temperature or cool. (Do not put raw thick honey directly onto ice, or it will seize and harden).
  • Combine: Mix bourbon, honey syrup, and bitters in a mixing glass.
  • Stir: Fill with ice and stir for 25 seconds.
  • Strain: Pour over a large clear cube.
  • Garnish: Express the lemon peel. The sharp, bright oils of the lemon cut through the sweetness of the honey perfectly.

Notes

  • This version is exceptional with “High-Rye” bourbons, as the spicy rye notes contrast beautifully with the floral honey.
